These go with absolutely everything ranging from eggs, fish and sandwiches to grains like rice and buckwheat groats and are especially great on burgers or eaten on their own!

INGREDIENTS :
- 1 medium red onion
- 2 TB (Tablespoons) dried oregano
- 1/2 tsp (teaspoon) salt
- 2-4 TB red wine vinegar (I like mine with about 3 TB red wine vin. for a more pickled flavor)
- 1/2 c (cup) olive oil
STEPS :
- Slice your red onion into circles or half moons, your preference.
- Grab a jar or bowl and combine your oil, red wine vinegar, dried oregano and salt and either shake it up if using a jar or mix inside your bowl.
- Add your onions to your wet mixture and combine by either mixing it all together or shaking up your jar.
- Allow the onions to sit for a few hours before use so they can marinade a bit, or you can use them immediately after coating in the wet mixture.
Onions could be kept on the countertop for up to 3-4 days or in the fridge for up to a week. They get better with time.

You’ll need red onion, olive oil, red wine vin, salt and dried oregano.

Slice your onions into circles or half moons.

Thinner slices intake the marinate flavors better.

Add your olive oil, red wine vinegar and salt to a container like a jar.

Prepare 2 TB dried oregano.

Add to your wet ingredients and shake the mixture up or mix if using a bowl.

Add your onions to the wet mixture.

Shake everything up or mix if using a bowl.

Allow the onions in the marinade to stand for a few hours to intake the flavors or use immediately. These onions get better with time. Leave standing on your counter for up to 3-4 days or in the fridge for up to a week (or even longer).
