INGREDIENTS : (serving size 4 sandwiches)
- 8 slices of artisan bread (or sourdough)
- 1 cup mayo
- 2 garlic cloves, crushed or minced
- 1/2 tsp (teaspoon) coarse salt
- 1/2 cup cream cheese
- 1/2 cup cheddar cheese, shredded
- 2 TB (Tablespoon) heavy cream
- 1/2 tsp coarse salt (yes, again)
- 8 slices cheddar cheese
- 8 slices provolone
STEPS :
- Begin by setting your cream cheese out for at least 30 minutes on the counter to soften. Once softened, mix your cream cheese with 1/2 tsp coarse salt, the shredded cheddar cheese and the heavy cream. Set aside.
- Mix your Mayo with the other 1/2 tsp coarse salt and the garlic. Set aside.
- Lay out your 8 slices of bread. Put 2 slices of cheddar on 4 slices of bread. Put 2 slices of provolone on each of the other 4 slices of bread.
- Divide your cream cheese-cheddar mixture into 4 parts and use a butter knife to smear it on top of the slice of bread with provolone. Then top with the cheddar sliced bread so that all the cheeses are facing each other.
- Use another butter knife to smear your garlic Mayo on top of the bread on both sides (do one side at a time otherwise it gets messy) and lay the sandwich Mayo side down into a medium hot pan. Cook for 4 minutes. While it’s cooking, smear the other side with Mayo and then flip. Cook for 4 more minutes.
- Once they’re golden and crispy, slice diagonally and enjoy, preferably with my Roasted Tomato Bisque .

Sit your cream cheese out on your counter for at least 30 minutes before you’re ready to begin putting these grilled cheeses together so that it can soften up a bit and is easier to mix.

Mix cream cheese with grated cheddar cheese, heavy whipping cream and 1/2 tsp of salt. Set aside for now.

Grate your garlic cloves into your bowl with mayo and add another 1/2 tsp of salt and mix. Set aside.

Lay out your bread and begin topping with 2 slices of cheese on each slice of bread.

Divide your cream cheese and cheddar cheese mixture between all your sandwiches and use a knife to smear it down. Top with the other slice of bread with double cheese slices and proceed to the next step.

Coat one side of your grilled cheese sandwiches with some of your garlic mayo mixture. Use a knife or basting brush.

Set your grilled cheeses into your medium hot pan with the mayo basted side down first.

As the first side cooks, coat your second side with the garlic mayo as well. Cook for 4 minutes to melt all the cheeses.

After 4 minutes, or when your first side is golden brown, flip to the second side and cook for 4 more minutes to melt the cheeses on this side as well.

Once both sides are golden brown, you’re ready to enjoy. I recommend eating this grilled cheese sandwich with a nice bowl of my Roasted Tomato Bisque .
