Turkey, Egg and Cheese Croissant

I’m back with yet another super easy and quick breakfast idea that deviates from your boring scrambled eggs and toast.
A turkey, egg and cheese croissant !
I personally love a nice runny yolk and this breakfast sandwich is the perfect thing to soak up a good warm yolk from your plate.
The best part? It comes together in less than 6 minutes!

This sandwich would be great topped with some of my Countertop Marinated Red Onions !

INGREDIENTS : (makes 2 croissant sandwiches)

  • 2 Croissants, sliced in half and toasted.
  • 4 Eggs.
  • 4 slices of Deli Meat, like Turkey, Ham, Chicken and the likes.
  • Shaved Cheese. I prefer Manchego, Asiago or Cheddar.
  • 1 TB (Tablespoon) Butter.
  • Salt and Pepper to taste.

STEPS :

  1. Slice your bagel in half and toast it. You can use the oven, the top of your toaster, or do what I did and use a dry pan on your stove top. I say dry because croissants are a butter filled flaky dough, so they do not need any additional butter for browning. Toast until golden brown and soft.
  2. Melt 1 TB Butter in your pan and add your eggs. Cook on low-medium heat for 2-3 minutes or until the whites are set. Add salt and pepper. Leave the yolk runny. This is called a Sunny Side-up Egg.
  3. Lay your deli meat of choice on one half of your toasted croissant, top with 2 eggs (per each sandwich) and use a grater or vegetable peeler to grate thin strips of cheese atop your eggs and top with the second half of your toasted croissant and enjoy!

This is honestly such a quick and easy breakfast that so many people completely forget about, or believe might be difficult to achieve, but it takes hardly any time at all and the flavor, especially for such a simple sandwich, is outstanding.
Don’t forget to use your warm croissant edges to soak up all that egg yolk on your plate! Its the best part!

Toast your croissant halves until golden.

Melt your butter in a pan and add your eggs. Cook only on one side until the whites are set in place. Add salt and pepper to your liking.

Lay 2 slices of your meat of choice atop your toasted croissants.

Put your cooked sunny side up eggs on top of your sliced meat.

Top your warm eggs with shaved hard cheese. I prefer manchego, asiago or cheddar. I also enjoy using a vegetable peeler to get those extra thin strips.

Top with your second half of a toasted croissant and enjoy!
