Buffalo Chicken Wings

I hate deep-frying things, so this recipe can be completely done using your favorite pan, not much oil, and your oven. If you prefer to deep fry, feel free.

I don’t think there is anything in the world that my husband loves more than Buffalo Chicken Wings, unless its the Buffalo Chicken Tenders from Dennys. He’s so head over heels about their buffalo sauce, that during the early stages of our marriage, year 2, I believe, while he was away at training for the United States Marine Corps, on the day he was supposed to return, I decided to drive 3.5 hours, each way, to the nearest Dennys to us, to get him sixteen cups of that specific buffalo sauce because they refused to sell it to me by the gallon.
With all that being said, when he says “Babe, this buffalo sauce is perfect” , I believe him.
This recipe is dedicated to you, babe.

INGREDIENTS :

  • 1 pkg (package) of Chicken Wings (roughly 14 full wings)
  • Salt and Pepper to taste
  • 6-8 TB (Tablespoon) Corn Starch
  • 1 TB Garlic Powder
  • 1 TB Onion Powder
  • 2 tsp (teaspoon) Paprika Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • Oil for frying

INGREDIENTS FOR BUFFALO SAUCE :

  • 1/2 cup Butter, melted (1 stick)
  • 1 cup Franks Red Hot Sauce
  • 1/4 tsp Garlic Powder
  • 1 tsp Brown Sugar

STEPS :

  1. Preheat your oven to 385° F.
  2. Cut your full chicken wings into flats, drumettes and tips. You can discard the tips of the wings OR save them in a bag in your freezer for making a chicken stock later. Once cut into pieces, salt and pepper both sides.
  3. Using a plate, bowl or tray, add your corn starch, garlic powder, onion powder, paprika, salt and pepper and give it a good mix to fully distribute.
  4. Coat your frying pan with oil. I typically like to just coat the entire bottom. You don’t need too much seeing as we are not deep-frying these wings. Heat up your oil in the pan on medium to medium-high heat.
  5. Coat each wing in your cornstarch and seasoning mixture. Shake off the excess and lay down onto your hot oil in the pan. Pan fry for 3-4 minutes on each side, until golden. Once done, remove from the pan and lay them on a baking sheet. I prefer using a baking rack for this so that the air circulates better around the entire chicken wing piece and ensures a crispy coating.
  6. Bake in the oven for 8-10 minutes.
  7. Remove from the oven, coat in sauce and enjoy!

STEPS FOR BUFFALO SAUCE :

  1. Melt your butter in a sauce pot or pan over low-medium heat. Add your hot sauce and give it a very good stir to fully mix the butter and hot sauce together.
  2. Sprinkle in your garlic powder and your brown sugar and give it another stir and it’s ready for use.
