You know those moments when a random food enters your head and you can’t stop thinking about it no matter how hard you try?
That’s been me the past 2 days with this sandwich on my mind.
I didn’t quite know exactly what I wanted on it aside from tomato, mozzarella, basil and balsamic vinegar glaze, but then the perfect sandwich combo hit me like an 18 wheeler on an icy road, and thus, now here I am, sharing this beauty with you.
INGREDIENTS :
- Ciabatta Bun OR 2 slices of bread, lightly toasted.
- Fresh Mozzarella, sliced.
- Tomato, sliced.
- Balsamic vinegar glaze OR Balsamic vinegar.
- Fresh Basil leaves OR dried Basil.
- Salami, prosciutto or any cold cut meat of your choosing. (optional)
- Pesto OR Chimichurri sauce. (can be omitted, but, will make the sandwich sad)
- Salt and Pepper to taste.
STEPS :
- Start by prepping all of your ingredients so that its easy and quick to put together. Slice your mozzarella, tomatoes and gather your meats and pesto/chimichurri along with your preferred basil type and of course the balsamic. Set everything aside.
- Lightly toast your ciabatta or bread and begin composing your sandwich.
- First, lay down a good dollop of pesto or chimichurri on each bread half. Top the bottom half of the bread with your fresh mozzarella, top the cheese with tomatoes, sprinkle some salt and pepper on top of your tomato slices followed by the balsamic glaze. Top the glaze with your meats, which are optional, but are a delicious addition, followed by a topping of your basil and then put the second half of your bread on top and slice. Enjoy!
