This recipe comes together within 5 minutes of hands on time and is ready to eat within 45 minutes of baking time which is completely hands off. Chicken turns out incredibly flavorful and juicy all over, every single time!
If you have the mayo “ick“ or just aren’t a mayo type of person, try this with a plain yogurt (preferably greek yogurt, full fat or low fat will work), just know that it won’t be as delicious as it would be with mayonnaise, which, lets remember is just oil, egg yolk, and a little lemon juice and acts as a binder to the seasonings and your meat, nothing else.
INGREDIENTS : (per 2 Chicken Breasts)
- 2 Chicken Breasts
- Salt and Pepper to taste
- 2 TB (Tablespoon) Mayonnaise (could use more) (divided)
- 1 tsp (teaspoon) granulated Onion Powder (divided)
- 1 tsp granulated Garlic Powder (divided)
- 1 tsp dried Oregano (divided)
- 1/2 tsp Paprika Powder (divided)
STEPS :
- Preheat your oven to 385º F.
- Add salt and pepper to the bottom side of your chicken breasts. Top each chicken breast bottom with 1/2 TB (Tablespoon) mayo. Rub the mayonnaise into the bottom of the breast and top with 1/4 tsp granulated onion powder, 1/4 tsp granulated garlic powder, 1/4 tsp dried oregano, and 1/8 tsp paprika powder on each breast bottom. Once coated, just flip them breast side up.
- Repeat all the above steps with the top half of your chicken breasts now. Salt and pepper followed by mayo, onion powder, garlic powder, oregano and paprika.
- Cover your baking sheet or cooking vessel with the seasoned chicken breasts with a lid or foil, bake covered for 30 minutes. After that time, remove the lid/cover and bake uncovered for an additional 15 minutes.
