Banana Bread with Cream Cheese Swirl

Lets not bead around the bush here, I know that you have some overripe bananas sitting in your fruit bowl, on your counter, in your fridge or inside of your freezer, right now, so get up, go grab 3 of them and make this absolutely delicious banana bread with a cream cheese swirl!

INGREDIENTS :

FOR THE BATTER

  • 3 ripe Bananas
  • 1 1/2 c. (cup) All Purpose Flour
  • 3/4 c. Sugar
  • 1/2 tsp (teaspoon) Baking Soda
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 tsp Cinnamon Powder
  • 2 Eggs
  • 1/3 c. Oil or Butter (melted)
  • 1 tsp Vanilla Extract
  • 1/2 c. Pecans, chopped (optional)

FOR THE CREAM CHEESE

  • 8 oz Cream Cheese (room temp)
  • 1/4 c. Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract

STEPS :

  1. In a medium-large bowl, smash the peeled bananas with a fork, add sugar, oil, eggs and mix. Add in vanilla extract, cinnamon powder, salt, baking powder, baking soda, and flour. Mix again until fully incorporated.
  2. If adding nuts, at this time go ahead and chop them and stir them into your batter. Also, preheat your oven to 350º F. Set your batter aside.
  3. In a small bowl, combine your cream cheese, sugar, vanilla extract, and egg. Mix until smooth. Set aside.
  4. Line a bread pan with parchment paper and rub down with butter or a spray. Pour half of your Banana bread batter into the pan. Followed by adding your cream cheese mix. Then top the cream cheese with the rest of your banana bread batter. Use a fork or butter knife to swirl everything around together. Bake for 60-70 minutes.
  5. Once you can stick a toothpick or butterknife into the middle of the bread and pull it out without seeing any raw batter on it (you may notice some cream cheese), remove from the oven, let it rest 30-60 minutes and cool down and enjoy!
